Rims step Mash 144 deg for 30min, then 158 deg for 30min, then 170 for 15min.

Build large yeast starter
Pitch yeast @ 60-65 deg
Ferment at 57-58 deg for 2-3weeks
Raise to 62 deg for diacetyl rest for 2-3 days
2ndary @ add fining agents & lower temp 2 deg/day till reach 36 deg for 4-6weeks
