Notes
Peel ginger with back of spoon. Blend with some clean water.
Zest limes.
Put 6L of water into pot. Add ginger. Boil. Once boiling starts, add lime juice and zest. Turn off heat. Let simmer for 20 minutes.
Put 16L of water in fermenter. Add boiled ginger/limes liquid. Confirm temperature is under 30 degrees Celsius and then add yeast nutrients and yeast.
Ferment for 2 weeks.
Add secondary ginger and lime additions to 2 cups of boiling water to sanitize before adding to fermenter.
V2 1.2g of sucralose
V3 1 g of sucralose
