Brewed for PhD celebration.
Did perform the double decoction, but had to add around as much as a gallon of water to cool off the first protein rest. Used a bag in a lauter tun cooler for mash. Increased boil to 75 minutes to boil down. Still ended up below gravity.
Also, no bubbling after one night with Wyest #1214, so I pitched a packet of dry Belle Saison. It bubbled happily all the way home and still going a week later.

On May 31st I woke up to 3 1/2 gallons of this beer in secondary spilling out of a broken fermentation bucket spigot. It was all over the office floor. Smelled great, but I need that beer for my PhD party, so on June 1st I brewed a BIAB version.This Recipe Has Not Been Rated
