Taste Notes

This is a cereal mash. Firstly cook the sushi rice with Campden-treated water, like congee. Use 2.75 cups of water per 1 cup of rice. Cook for specified time, then blend with a hand mixer. Cool to mash temp and add it to the main mash when adding the barley.
