Notes

pitched immediately while running off the kettle. pinched the hose to spray a bit, and get some air into the wort. temp may have been a bit high. felt pretty cool coming out of the chiller, but measured temp was 80+ on the fermenter later... crashed to 70 to 60over the course of about an hour, then set to 55 and left it alone. +0 days 1.040 OG, 70ish degrees +0 days 3 hrs, 55 degrees, not much activity yet... a little bit of siphoning on the blow off tube, but... not much, but less than the temperature gradient would have caused, so there's definitely some yeasties doing their thing. pushing on the fermenter lid expelled some bubbles even though it's chilled 25 degrees. +1 days, a little bubbling, nothing crazy yet +2 days, oh yeah, smells like yeast farts now, lots of off gassing, smells great +3 days, virorous fermentation. still holding at 55. +14 days, dropped in strawberry puree. gravity at 1.018. +20 days, bumped temp to 65 +21 days, bumped temp to 68 +22 days, bumped temp to 70, current temp is still 63 in the chamber. my heater is in the other fermenter... so i'm just letting it warm up naturally. +23 days, dropped back to 60. gravity @ 1.014. i realized today i didn't use strawberry puree, but strawberry base, so i ordered another can of proper strawberry puree to add in the next few days. i may or may not pitch a little more yeast, not sure yet... +27 days, crashed to 40 +29 days, racked to carboy, added gelatin, crash harder to 36. planning to keg in a few days.
