Notes

My own recipe. A tweak on the Lyford 188 v1.0. Changed the grain bill and added Citra and Mosiac hops. Lots of hops - 1#, 16oz in total! 02-03-2018: Brew day adjustments....didn't have as many Citra hops as I thought. Was planning on adding 42g of Cascasde, Centennial, and Citra for 7 day dry hop. Only had 23g, so I upped the Cascade and Centennial to 52g. First time using pH meter. Right after I mashed in I took a reading. It is slow getting to its final reading. I got to 5.3 but it was still going down but very slowly. Took a reading after I had all the wort in the brew pot and it went down to 5.18. It took about 60 seconds to bring temp down from 205F to 180F. Continued to drop and I added heat to bring it back up to 180F. At the end of 20 minutes it was at 170F. Took about 8 minutes to bring it down to 64F. Put 3 minutes of oxygen on it. 02-09-2018: Added first dose of dry hops. Super cloudy. Tons of cirtrus. Already down to gravity reading of 1.016. This yeast works fast! 02-13-2018: Transferred to secondary and added 3 day dry hops. Moved the 7 day hops to the secondary. Gravity reading steady at 1.016. 02-16-2018: Didn't get a full 5 gallons. Probably 2-4 inches below normal.
