Don't Let the Mango sit too long

Buy the mango frozen from a warehouse club. The flash freezing killed the bacteria and opened up the fruit cells. I would suggest leaving the mango in for no more than a week in primary. Transfer to secondary for at least two weeks. Drink fresh.
