Ferulic Acid rest for clove-like flavor.
60 min vigourous boil or 90 min low boil.
Do not aerate if banana esters desired. Produces isoamyl acetate.
Underpitch if banana esters desired.
Add corn sugar if banana esters desired.
Decoction mash will also produce isoamyl acetate.
