Notes

OG 1.076 FG 1.014 IBU 100+ SRM 6 grain efficiency was good enough so didnt add turbinado sugar Mash @ 153F, Whirlpool hops rest for at least 30 minutes Pitch yeast at 68F and ferment for 7 days (08/30). After 1.014FG is reached, add Polyclar and wait another 3 days (total 10 days since pitching) Add first set of dry hops on day 11 (09/03) into Fermenter, and dry hop for another 7 days (total 17 days since pitching - 09/10) Rack to Keg on Day 18, add secondary dry hops (in hop screen) for another 5 days (total 22 days since pitching - 09/14) Remove keg hop screen and force carb Keg on Day 23 for 5 days (Ready to drink on day 27 - 09/19) Polyclar instructions Step 1. Dissolve 0.3 to 0.5 grams of Polyclar per liter of beer in sterile water. For a 5-gallon batch you will need 6 to 10 grams (approximately 2 to 4 teaspoons) of Polyclar. This will completely dissolve in a few ounces of water. Slowly add water to powder and stir. Step 2. Add mixture to beer and stir. Step 3. Allow to settle six hours. ------------ FG for batch made on 5/13/18 stopped at 1.020 (75% attenuation with WLP095 which is to specIf FG needs to drop to .014 to .016 range like heady topper is, attenuation needs to be 80% - use gigayeast, OR reduce OG to "specs" SG for batch made on 08/23/2020 was 1.065, so did not add sugar into the boil. Using Gigayeast VT IPA yeast this time. FG did not drop below 1.020 again, despite using Gigayeast with a starter.
