Notes

Mash and sparge with cool water to achieve boil volume. When wort has cooled to 110F add 2oz Siggi’s Icelandic yogurt and mix well. Hold kettle between 95-105 for 24-48hours or until wort has achieved desired tartness. Bring wort to a boil and finish as normal.
