Notes

Create a tea out of 2lb mixed nuts (pecans, cashews, walnuts, pumpkin seeds). Boil nuts for as long as it takes to render the fat from the nuts. Allow the tea to sepeate. Once seperated freeze the tea and skim and discard all fat. Reserve spent nuts. Add 2lb spent nuts and 8 oz. nut tea at dough in. Add 8 oz. tea and 7.5 oz. raisins to boil at 30 mins. Add 8 oz. tea and 7.5 oz. raisins to boil at 15 mins. Add 1/2 tsp each of cinnamon and nutmeg to boil at 10 mins. Rack without filtering to primary. Filter out spent nuts when racking to secondary. Filter again when kegging. Age for at least 2 months.
