Notes

Use 4.5 gal carbon filtered water adjust w/ 4g gypsum. Step mash 45m @ 150dg ramp to 170dg over 15m or infuse 2.5 gal boiling water. Rest 10m at 170dg. Verlauf until clear. Collect 6.6gal, sparging with 175dg water. Boil for 75m using the hop schedule in the recipe. Whirlpool and allow to settle for 15m then chill to 164dg. Aerate wort and pitch yeast. Ferment warm (ale temp) for 1 wk then dry hop and hold warm temp for 1 wk more. Rack, cold crash and cold condition for 1 wk.
