Notes
First thing is to make the beer which is for 3 gallon batch size
Mash grains and transfer to kettle. Let cool to 110 degrees and pitch 2oz Siggi’s Icelandic yogurt. Hold temp 95-110 overnight or until pH reaches 3.5. Boil for 60 min. Cool and pitch Cali Ale yeast.
When primary fermentation slows, add apple juice to fermenter topping off to 5gallons. Let ferment addition 7-10days.
Crash and carbonate to 2.7-3.0 vols of CO2.
