Notes

Noah Bissell: Grain bill is like 75% golden promise, 10% 2-row, 10% flaked wheat, and 5% dextrose. OG: 1.070-1.074, FG: 1.011-1.014. Mash low. Use pretty neutral water and make sure you get your mash ph nice and low (~5.3 at room temp). Boil for 75 mins, bitter with about .25 oz. Apollo, 1 oz Mosaic 1 oz Simcoe with 10 mins left, 3 oz Citra, 3 oz Mosaic, 1 oz Simcoe @ flameout with a 30 min hotstand before chilling. Two dry hops, add first one at the tail end of fermentation (1 oz each Apollo Citra Mosaic Simcoe) then add the next one 2-4 days later (2 oz Mosaic, 2 oz. Citra, 1 oz. Simcoe) and let sit another 2-4 days then crash cool for 2 days. Secondary isn’t necessary but you can use one. Mash had hard time keeping temp (stuck). Also no mash out for same reason… Ca 116 Mg 12 Na 0 Cl 153 SO4 125 Final pH = 4.36
