Notes

4 days fermenting with underpitched saison yeast (75% DuPont, 25% Belle), cold crash to 35F for 3 days, rack onto lager cake. Ferment for 3 weeks at 48F, warm to 65 for 2 days, rack to keg and age at 35F til the competition.
