Taste Notes

Aroma - First notes are full of orange and grapefruit. Second notes have much more pine. Third notes (without swirling) reveals the caramel and roasty notes of the crystal malts. Overall, excellent progression from the new world hops to the malt backbone. 11/12. Appearance - Clear. Medium Amber. Strong, thick, white, foamy head that remains to the bottom of the glass. Lacing throughout. Overall, matches the original 3/3. Flavour - Good bitterness. Malt and hops are almost perfectly balanced. Medium biscuit, strong caramel with some toasty notes right at the end. Citrus, sweetness and bitterness initially moving to a moderate malt backbone and deeper bitterness, finishing is clean with some alcohol warmth. Overall, strong flavour with almost perfect balance 18/20. Mouthfeel - Full body but no astringency or lingering flavours. Leaves the mouth completely. Carbonation is ideal. Alcohol warmth present after swallowing. Overall, pleasing for a high alcohol beer 4/5. Overall Impression - This is an excellent version of a renowned DIPA. After comparing to the original - this recipe has stronger new world hop flavours and achieves a better bitterness and malt balance (as the original has much more malt sweetness) 9/10. If you are into big IPAs - try this recipe as you will be blown away how good this one is.
