Yeast Starter - Sept 23/17 @ 5:30 pm lactic acid only at 8ml ph pwer at 5.0 so added 2grams of chalk - no effect on mash ph cinamon 2.25 ounces broken .2 ounce all spice crystallized ginger 3 ounces add 1.7 litres of water through mash chilled using whirlpool in the kettle - worked great pitched yeast at 66 deg Fermentation at 67 Deg: Slow start - transfer from blow off tube to air lock after two days - activity (bubbling noticed right away) Primary fermentation longer than expected - trub dump on Oct 6 Gravity 1.017 Secondary fermentation until Oct 12 Added gelatin Oct 12 (one pouch to 1 cup 150 deg water) - stirred Cold crash to 38 deg for kegging Oct 15
