Pitch at 64F
Ramp up to 82 F over 7 days. Hold at 82 until no activity then turn it off and cold crash. Ferment for 10-14 days or so long as there is activity. If it is still going let it go.
If it is 1.010 or higher create an active starter. Add whole starter to wort. Use California ale or champaign yeast.
