Notes

Duvel Clone 70% Effiency 6 gal and end of boil. 5.5 gal batch 1.072 1.007 89% Attenuated 32 IBU 3 SRM 8.5% ABV 3lbs Table Sugar cane or beet sugar 11lb Belgian Pilsner Malt Mash 149 Belgian step mash - Chez Saaz 3.5% 90 min 2.25oz Boil 90 WLP570 or WY1388 3 Packs Pitch at 64F Ramp up to 82 F over 7 days. Hold at 82 until no activity then turn it off and cold crash. Ferment for 10-14 days or so long as there is activity. If it is still going let it go. If it is 1.010 or higher create an active starter. Add whole starter to wort. Use California ale or champaign yeast. Carb to 4Vol
