Notes

Windmill express RO water. TDS 32ppm mash 3 gal, gypsum 4.5g CaCl2 0.3g epsom salt 2.4g baking soda 0.6 heated strike water to 166F. After rise mash 149-150F ~30min ph 5.25 cooled sample. First runnings 1.077, <2gal. total mash and recirc time 1hr:45min Sparge 6 gal gypsum 9g CaCl2 0.6g epsom salt 4.8g Heated to 198F transferred to HLT, ran off mash to kettle then batch sparged and recirculated. intial sparge 173, then recirc stabilized at 167-168. collected 7.75gal, 1.036 wort preboil boiled 60min and added hops as per recipe. at flameout 1.045, ran chiller and cooled kettle to 180 and then shut off cooling water, continued recirc and added 1 oz each of hops. Recirc 30 min then off and let settle 5 min with Ice water from subm pump in cooler, cooled at 60F. Collected 5.5gal wort in BB2. hydrometer 1.046 OG Rehydrated 1 dry packed of US 05 in 100ml RO water that was heated to 190 then cooled to 80F. Pitched yeast at 4:40pm saturday 9/16 4pm bubbling Thursday 9/21 730pm. SG check. It is somewhere around 1.010 but it is still fermenting. Smells amazing. Very bitter Tuesday 9/26/17 FG 1.008. ABV 5%; Racked to keg1 onto 0.5oz each of cryo hops (simcoe, mosaic, citra) in keg dry hopper. Set up cool jacket on glycol loop and set at 68F to dynamic dry hop. Used gas thermowell and carbonation lid to recirc. recir overnight (~16 hours). Wed 9/27 pulled dry hops. Smells amazing. Set in chest fridge at 36 to cool overnight and will quick carb tomorrow. Thursday carbonated with blichman quick carb. Set in keezer to serve.
