Ferment at 65 for 3 days and ramp up to 70
Mash 154
Steep hops at 165
60 secs O2
Ferment hop 48 hours after pitch. Krausen fell 72 hours in.
Closed transfer onto dry hops that I think will round it out.
Set at 18 PSI for two days and check on it.
Add super yeast first to build up some cells and add london ale iii when I see activity
Mash in 4 gals 164 - 1.8 g gypsum, .4 g CaCl, .4 g salt, 1.2 ml phosphoric
Target mash pH: 4.35
5 gal sparge - 2.3 g gypsum, .5 g CaCl, .5 g salt, 1.5 ml phosphoric
Ca: 62 Mg: 8 Sodium: 15 Sulfate: 90 Cl: 44 BiC: 1
Fermented beer was very fruity with lots of grapefruit a little dank
Farmhouse hop blend was citrus/floral
Kegged at 2.5 weeks. Half under CO2 stopped siphoning, so it got 4 oz DH. Half got no DH auto siphoned.
Auto Siphon half: Awesome hop character, hop oily but not too much. Very bitter
