Taste Notes

4/12 At bottling: color looks right on, bitterness is close, maybe a little bit more up front is needed, tastes a little bit on the "sweet" side, if that's how to describe it. Bitterness really lingers in the mouth, just like the real thing. Feeling a little proud at the moment.

Notes

3/18 - Hit mash temp pretty much right on. For batch sparge, get water up to 185F before sparging. Water at 168F dropped once added to grain to about 160F, need hotter water to hit 168F Used hop screen for first time. 3/25 Took gravity reading after 6 days, ~1.021, going to let it sit longer before racking to secondary 3/28 Racked to secondary, ~1.020 4/12 Gravity ~1.020; initial impressions, 4/4/2018 - Bottling day, beer finished at 1.105 very nice, taste is not as punch, backed off on the Special B too much I think, could use more. Hop bitterness is there, but not up front as much I'm looking for. Tastes like Arrogant Bastard Lite, but not bad overall. Fermentation of about 15 days right to bottling, no secondary was just fine 4/25/2018 - great flavor, preferred by many over the real thing. Maybe a touch more carbonation next time - I don't think the recipe needs to be modified, possibly some type of grain that improves head retention, but that would be it.
