Taste Notes

A light session IPA for summer. Citrusy and refreshing. A good beach or lawn mower IPA.

Notes

Add minerals to 7.5 gal water in large brew pot. Transfer 20 qts to small brew pot and add lactic. Then transfer 8 qts to stock pots. Heat strike water in large brew pot to 141F. Put basket with grain bag in large pot, dough in grains, stir, put lid on and mash at 131F for 30 min protein rest. While mashing, heat water in small brew pot to 205 and stock pots to 170F. After protein rest, add 4 qt to mash from small brew pot and hold at 148F for 30 min saccharification. During sacch, keep water in small brew pot at boiling. After mash, iodine check mash for conversion then add remainder of small brew pot water (8 qts) to large pot, stir and mash out at 168F for 10 min. Lift bag, sparge with stock pot water and let it drain into brew pot. Dispose of grains and bring to a boil. Follow 75 min boil schedule. 6/26/15 - Mistakenly started with 7.75 gal instead of 7.5. Boiled extra 15 minutes. OG 1.040, 5.25 gal into fermenter at 63F. 6/30/15 - Ramped up to 67F. Dry hopped 7/10. SG 1.008. 7/17/15 - Bottled 4.9 gal at 2.6 vol with 4.6 oz corn sugar. FG 1.007, 82.5% attenuation, 4.3% ABV.
