Brewed on 4/23/13. (Happy 4th Birthday Noah! This is your birthday brew)
Didn't quite get to my 152 mash temp. Settled for 149. Beer will hopefully be a little dryer but not too thin.
Used RO water and added pH stabalizer. didn't take pH reading.
Forgot Whirlflock in mad dash to transfer munich helles to keg then bock to fermentor/yeast cake before leaving to Noah's birthday train ride and dinner.
Pre-boil gravity came up short again by about 4-5 points. However, OG was higher than expected, maybe due to 90 minute boil evaporation rate. Also, got conflicting readings from hydrometer (1.080-2) vs refractometer (1.070-2).
Pitched onto yeast cake from munich helles from 3/10/13 (v1.0)
Was able to chill wort down to about 55 before pitching onto yeast cake. very fast take off. i would say there was activity within a couple hours. Fermenting at 48-50 based on vessel thermometer.
