2/10/2013 - After 4 weeks of aging, the hop flavor is slightly "musty". It tastes like it was aged in an attic, almost having a dirty quality. I am noticing an overly biting taste from the Centennial hops. Bitter without much malt balance.
I would hoped that this batch would have a smoother flavor with a bright op aroma. The hop aroma in this beer is dull. Also, more body is needed.
Changes - Next time I would like to dry hop with either Citra or Sorachi Ace to bring out the fresh hop aroma. Use more more malt and and dextrine to help mouthfeel.
