Taste Notes

took a gravity reading on Nov 15th - 1.020. Took a taste too... astringent after taste.... not sure what's going to happen as it ages.... We'll see. I put it in a secondary on November 19th. Real rough smell, not sure what to make of it, so from here on in it's an experiment. Had a thought that the yeast I used was infected, maybe from the fact that I used a mason jar, I didn't take the time to clean. sanitize yes, but didn't PBW it. Just a day into the secondary and it has significantly cleared up, smell still rough, but I'm now giving it a Diacetyl Rest on the 20th. Will wait till tomorrow evening and put in the garage to cold store it for the next few weeks.
