Noticed signs of fermentation on 11/20/2016 around 8:30 am. Bumped temp up to 68 on 11/23/2016 around 7:30 am. Cold crashed to 34 on 11/30/2016 around 6:00 pm. Fined win gelatin on 12/1/2016 around 9:30 pm. Took a gravity reading. It was 6 brix which comes to 1.008 final gravity. 5.5% ABV. Kegged on 12/3/2016 around 11:00 pm. Set co2 to 30 psi. Set freezer temp to 38. Reduced PSI to 12 on 12/4/2016 around 8:00 am. Reduced PSI to 10 on 12/8/2016 because the pours were too foamy.
