2016-11-18: Pitched yeast into 1.048 SG cider from Ozzie at 64°F after hydrating yeast in 87°F water. Using 5 Gal PET carboy as I don't know how much krausenI will get. By 21:22hrs it was already bubbling. The temp in the room is set to 68°F. I expect the temp to keep rising into the low 70s.
2016-11-20: Bubbling is regular. Exothermic fermentation has not pushed the temp up so I have rasied the temp in the room to 72°F. After a few hours the cider's temp is now 68°F.
2016-12-01: Racked tp secondary. Hydrometer read 1.000@67.2°F or 1.001. Refractometer read 4.8 Brix which converts to 1.002.
2017-01-09: Bottled with Celina's assistance, of course. FG via refractometer was 4.4 Brix. That is an FG of 0.999 once adjusted using the OG. Silver caps.
