Notes

Mash went well, 90 minutes at 150, reheating 3 times to hold temp. Mash-out was a little high temp at first, around 175. Didn't have a hop strain bag so I pitched direct to the boil. End of boil had a little more than would fit in the keg with the coil. After removing the coil I was able to get it all to fit. Filled buckets, using a colander to filter the heavy hops as it went through the hose. Had to use a lot of ice to get the temp down to 65 degrees before pitching the yeast. Yeast was Denny's Favorite wiht a 5L starter. After 24 hours I didn't like the small amount of fermentation so I pitched a pack of US-05 onto each of the 3 buckets. Fermented at 62 for the first 48 hours, then 65. Gravity was 1.020 after 9 days, racked to a smaller bucket and added the dry hops. Happy I'm doing secondary in a bucket with 6oz of dry hops in each, it never would have fit in a carboy. Plan is to dry hop for 11 days then keg on Saturday. Recent high-hop IPAs seemed to taste better when kegged quickly after dry hopping instead of waiting a long time.
