LAST BATCH USED 1007 GERMAN ALE AND TURNED OUT GREAT. NEXT BATCH TRY WLP209 KOLSCH7/4/11; Did all-grain batch and go better than expected efficiency. OG was 1.088.Total Hops Needed:Perle: .4 oz 8.2%Horizon: .95 oz 12%Columbus: .7 oz 15%Simcoe: 1.8 oz 13%Amarillo: 2.25 oz 8.5%Centennial: 1.6 oz 10%Mash at 152-154, protein rest for 60 minutes.This beer won me a gold medal in the IPA category at the 2010 MN State Fair.Original recipe used California Ale Yeast, had 2 lb vienna, .25 lbs extra special malt and no biscuit malt. Remarks from judges is that is was a bit grainy, which could be caused by vienna malt.Create .5 Liter yeast starterThis beer has a high citris hop flavor and aroma, but is balanced with earthy and pine notes.substitute crystal 10L for caramalt if not available.Optional: Double dry hop. First dry hop addition for 10 days, then add 2nd addition 3-5 days. Alternative is to run through a hopback.3rd Attempt:Went back to original recipe with no biscuit. Substituted Citra Hops for the Centennial. Also used Wyeast 1056 and will ferment at lower temps close to 62-64 to bring out citrus background and make a smoother beer.Used batch sparge.This Recipe Has Not Been Rated
