Notes

After boil timer turn off and let sit for 15 minutes. Cool to 70, pitch and ferment at 70 as well. Then follow fermentation schedule. Fly sparge by raising the top plate and pouring 2qts of water over letting it drain through completely between pours. Had a blowout sometime within 14 hours after pitching. I should have used the blow tube instead of just an airlock. Cleaned with starsan and the bubbles were so thick and fierce coming out it should have prevented any infection. Sanitized it all again and put the blow tube on to finish.
