+0 days 1.045 OG +16 days 5.1 brix +16 days tasted after primary, not bad, fairly light, reminiscent of a mexican lager. +16 days added 6lbs strawberry puree (two big cans) +16.5 days bubbling and blowoff tube activity +22 days 5.4 brix +23 crashed to 35 degrees overnight and added gelatin +25 kegged, force carbed @ 20 PSI for a few hours, shook the shit out of the keg, then dropped down to 10 PSI and pulled a few pints. over carbed, obviously, needs some time to condition. definitely strawberry notes. the aroma is amazing. the taste is little weaker than I wanted, definitely will kill the yeast next time, though i was worried about under-attenuation of my wort this time, so i let the yeast go to town on the strawberries. will also pitch some pectin enzyme next time too. i let a glass sit out for a few hours and swished it around every now and then to decarbonate it. has a slight hay smell, with hints of strawberry. it’s beer, alright. :) nice lacing, and wonderful creamy smooth mouth feel. there are tiny bits of red strawberry matter in the foam. not bad once some of the carbonation diffuses a bit. https://goo.gl/photos/Dwq9svHgXM3Fp1rm8 beersmith doesn’t calculate abv from the strawberry i believe… it’s only using the grain bill. thus, this turned out more alcoholic than beersmith thinks.
