It’s always great to hear from folks who enjoy our beer as much as we do, even if it’s a beer we haven’t brewed in over a decade! Here is some information you may find helpful in your attempt to brew a beer similar to Tenpenny Ale: Tenpenny Ale Malt Pale Malt – 82.42% Lt. Carastan – 8.59% Carastan – 4.3% Munich – 4.3% Black Patent - .39% Mash Schedule 68 C – 45 minutes Mash off at 76 C We target a beginning of boil gravity of 8.9 Plato and target 9.5 at the end of a 90 minute boil. Hop Schedule Nugget – 1.25714 oz/bbl – 15 minutes after beginning of boil (.25 oz per 5.5 gal) Willamette – 4.57143 oz/bbl – end of boil (.81 oz per 5.5 gal) Willamette – 2.28571 oz/bbl – whirlpooling (.41 oz per 5.5G) Cool the wort to 19 C and pitch with an English ale strain.
