Notes

Source: http://byo.com/malt/item/1574-weissbier and "Brewing with Wheat", by Stan Hieronymus, pgs 78-88 2016-03-13: Brew day: It went fine. My whirlpool is terrible. Amazing how much junk settles out in the Primary in the first half hour! Otherwise, I think I did what I planned. 2016-03-19: Racked to Secondary. SG is 1.014@70.4°F or 1.015. Bananas and no bad tastes - maybe suggestive of Schnider Weisse but tht is all at this point. Still bubbling and has more points to go through. 2016-03-28: SG is 1.013@68.1°F or 1.014. It appears fermentation has halted. Taste is OK. Might be time to keg. Decision: I am kegging it today. Keg #4.
