Notes

Strike Water = 10 gal RO water & 4.5 gal filtered tap. Sparge Water = 3 gal RO water & 2 gal filtered tap. Added 1 tsp gypsum to strike, 1 tsp to mash & 1 tsp to boil. Mash Temp below = 144F up top = 149F. Mashed for 1.5 hours. Vorlauf didn't go well. Some grain got around Wort into boil kettle was not very clear. Used strainer to remove some grain from kettle. Preboil gravity = 1.067. Boil went well. Boiled over at first. Maintained a strong boil throughout. All additions went according to plan. Chilled to 78F. Collected only 8 gallons. NEED DIP TUBE AND BETTER SCREEN! SG = 1.077 Pitched two packets of Safale US-05. Let it sit for 20 minutes on top of the wort. Then mixed. Pitching temp aprox 75F. Out of O2. Aerated with aquarium pump for over 1 hour. Temp came down to 65F over night. Bumped up by 1 degree per 12 hours up to 67f. Active fermentation and krausen. No airlock activity since carboy cap not sealing correctly. When pushed down to seal airlock was very active. Active fermentation for 10 days. FG 1.010 01/26/13 - Racked to secondary. Collected about 7 gallons. 02/8/13 - Dry hopped 1.5oz Nelson and 1.5oz Falconers Flight (hop bag with weight connected to keg lid. Suspended in middle of the keg). Will dry hop for 3 days then add another 1.5oz Nelson & 1.5oz Falconers Flight. 02/12/13 (early AM) - Dry hopped 1.25oz Falconers Flight and 1.5oz Nelson (total 2.75oz). Hop bag weighed and connected to keg lid. Previous hop bag from 02/08 dry hop removed. 02/16/13 - Kegged (close transfer). Cold crashed in keg and set regulator at 20psi.
