Pitch Lactobacillus Delbruckei and will wait 72 hours to let that take hold, then I'll pitch 1 packet of S-04.
10/01/11 - Nice and slightly tart/sour, very crisp and refreshing out of the fermenter. I think I'll bottle tonight or tomorrow and let it develop in the bottles from here on out.
