BREWING LEVEL: ADVANCED (Requires Lagering) Water adjustments should only be made if base water profile is known. Water Profile (Yellow Balanced on Bru'n Water): Ca - 50ppm Mg - 7ppm Na - 5ppm SO4 - 75ppm Cl - 60ppm BiCarb - 0ppm SO4/Cl Ratio = 1.3 Ferment at 60-62F for 7-10 days; when gravity reaches 1.010, or when fermentation activity noticeably slows, raise temp to 65-67 for 3 days for Diacetyl Rest. When Diacetyl Rest complete, gently rack to Secondary Fermentor (purge secondary with CO2 prior to racking if possible), and reduce 3-5F per day over the course of a week to bring temperature to 35F. Lager/cold condition in Secondary for minimum of two more weeks, preferably four. If using clarifying agents/finings, at end of lagering period, and prior to bottling or kegging, to clarify the beer, add 1 oz. Isinglass or 2-3g Gelatin to chilled Secondary and allow to settle for final 2-3 days. After cold conditioning is complete, bottle or keg - if using Priming Sugar, store at room temperature for 14 days to allow for proper carbonation, then enjoy your beer!
