Notes
2/16/2013 Dave designed this Saison based on
http://endofsilencebrewing.blogspot.com/2012/03/le-ferme-du-funke-brett-saison.html
tweaked grain percentages a little, increased Citra a little, changed to White Labs American Farmhouse blend with Brett
2/17/2013 Brew Day
Mash temp was correct (149F to 151F depending on thermometer, vs 148F target)
Pre-boil gravity was correct:
target = 1.039
hydrometer 1.022 at 140F = 1.038F at 60F
refractormeter 1.039
pre-boil volume was correct (8.0 gal)
Forgot to measure pH until the end of the mash! ph > 6.2 by test strip. Forgot to use 5.2 pH Stabilizer, forgot to add gypsom.
Post-boil volume was 6.75 gal (at ~200F, on target)
primary carboy height = 13", which corresponds to approx. 5.5 gal (on target)
SG = 1.044 hydrometer, 1.045 refractometer vs target of 1.050
Why so low????
8.0 gal at 140F, so 8.0*(1-.04*140/212) = 7.79 gal
6.75 gal at 200F, so 6.75*(1-.04*200/212) = 6.50 gal
(1.038-1)*7.79/6.5+ 1 = 1.046
BeerSmith's calculation of SG = 1.050 is incorrect.
