BREWING LEVEL: INTERMEDIATE (All Grain) Water adjustments should only be made if base water profile is known. Water Profile (Brown Malty on Bru'n Water): Ca - 60ppm Mg - 5ppm Na - 15ppm SO4 - 50ppm Cl - 60ppm BiCarb - 85ppm SO4/Cl Ratio = 0.8 Run off first gallon into brew kettle, bring to a boil and concentrate wort while continuing to run off remaining wort from mash into a separate vessel. When runoff complete, combine volumes, top off brew kettle with additional water as needed to reach volume of 7 gallons, and proceed with 60 minute boil. Ferment in Primary at 65-68F for 10 days or until all noticieable airlock activity has stopped, leave at 65-68F an additional 2-4 days to complete Diacetyl Rest. When Diacetyl Rest complete, bottle or keg - if using Priming Sugar, store at room temperature for 14 days to allow for proper carbonation, then enjoy your beer! Dry Yeast Substitute - Safale S-04
