Run off first gallon into brew kettle, bring to a boil and concentrate wort while continuing to run off remaining wort from mash into a separate vessel. When runoff complete, combine volumes, top off brew kettle with additional water as needed to reach volume of 7 gallons, and proceed with 60 minute boil.
Ferment in Primary at 65-68F for 10 days or until all noticieable airlock activity has stopped, leave at 65-68F an additional 2-4 days to complete Diacetyl Rest. When Diacetyl Rest complete, bottle or keg - if using Priming Sugar, store at room temperature for 14 days to allow for proper carbonation, then enjoy your beer!
