Hallertauer hops are used for bittering and aroma: http://www.bitburger-international.com/koestritzer/quality/ From here: http://hbd.org/clubs/cascade/public_html/brewing/brewing.html Cold steep 3x specified amount of Carafa malt for 24 hours prior to brew day in 72* F treated water. Cold steeping is less efficient, so you need to use more malt than that specified in the recipe to achieve same color extraction.
