Yeast Suggestions: White Labs WLP028 Edinburgh Wyeast Scottish Ale 1728 US-05 Our House ale yeast has +4% Attenuation factor outside fo the suggested 65-70% attenuatiuon range for yeast Ferment temps are in line: Want to aim for 18 C (64 F)

I cross ref'd the following books: BA's Hops Book, Hop Unions Hop Book, Hop Variety Handbook, Designing Great Beers, Brewing Class Styles, Classic Beer Style Series: Scotch Ale I suggest we don't use Gypsyum as it has sulfates that will accentuate the hop character too much, if we have something with Chloride (i.e. Calcium Chloride or non-iodized salt) I can do the salt add'ns based on style Suggested Mash temp is 68 C (154 F) for 1 hr Suggested Boil time: 1.5 to 2 hrs (I think 1.5 hrs is plenty) I took the suggested IBU by style and doubled the range (i.e. our suggested range to be 34-70 IBU), so picture Fat Tug IPA meets Traquair House Scottish Ale.
