In fermenter at 90 degrees. 6/1: Go home and Starting Brix: 13% 7/2: Bring up to 69° 7/4: Transfer to Secondary. Start drop to 40° Measure Secondary Brix 8%: 4.5 abv 9/2: Keg Brix 7.8%.
