Zmurgy November/December 2015 Volume 38 No. 6 Page 24 Mash at 147° for 75 minutes. Heat mash to 168° and mash out for 10 minutes. Sparge, boil 90 minutes, and add hops at stated intervals. Chill. Oxygenate when wort temperature falls below 80°. Pitch a sstrong starter of yeast at 68°. Fermentation temperature may be allowed to riese as high as 74°. When fermentation is finished, chill to 50° and cellar for four weeks. Rack clear beer onto priming sugar, blending thoroughly. Bottle and allow beer to condition for eight days at 75°. Cellar beer for four to six weeks. Extract Version: Subsitute 5.75lbs extra light dry malt extract or 7lbs extra light malt extract syrup for the Belgian pale malt.
