Taste Notes

A creamy, tart, rasberry taste. A very nice job for my first try at this style. I could see adding another pound of Rasberries to this since the flavor is somewhat light. Reduce lactose by .25 pd.

Notes

3 lbs. Rasberry with a little water and raise to 180 deg. for 20 minutes. Grains added at 180 for 30 min. Half gallon starter and double shot of O2 and it started fermenting in 10 hours. Tranferred a number of times to remove bits of fruit. Finally tied a sock on the end of the transfer tube to catch bits of fruit. Worked great. Boiled lactose and 1 1/4 cups of priming sugar for 15 minutes. Bottled 2 cases and a six pack on January 10th.
