Notes

5/3: Recycling this classic recipe. Adding 3oz of DME to see if we can get extra volume from the batch 5/7: Great BigBrewDay. Increased batch size on the fly to 12 gallons and with a slightly lower efficiency than usual - 67%, due to the Rye?, had add 3lbs of DME to reach target OG of 1.100. Pitched 4 scoops of Weyerbacher American Ale II yeast into each of three carboys with 4 gals each, full fermentation within 3 hours. NIcely avoided blow-off due to the extra headspace 5/9: Still going strong, sitting at 68F 5/14: Raised temp to 72F 5/19: SG @ 1.023, perfect. Racked 4 gals to keg and will dry hop today. Will also rack other 4 + 4 gallons to bucket/carboy and dry hop as well 5/21: 1.5 gallons to Brett keg, will sit until Xmas. 4 gallons to keg w/2oz Cascade. 5.5 gallons to bucket with 4oz Amarillo 5/27: Brendan bottled his batch. Taste and aroma is awesome
