Taste Notes

Tastes good... smells fruity, with a bit of banana, but not much or any banana in the taste. Classic weizen yeast taste. Strong (what I beleive to be) wheat taste (confirmed against hoegaarden... wheat taste is correct). No hop bitterness or flavor. A bit thin. No head, but may not be fully carbed. Phil mentioned that it was good, had the spicy taste but not too much bite. I translate that to mean it's a bit weak (although he liked it). Again, the carb is low so trying to fix that. On 11/22 I took this to beer club. Had good reviews, they said it was very drinkable and tasty. 12/7 - Potentially some diacetyl detected in aftertaste, but not in aroma. Still smells appropriate and intial taste as well. I wish I knew how long I had it on the yeast.

Notes

Good brew day, quick and easy while watching Football on 10.26.14 Measured and milled the day before. Strike water was at 153 and rested at 149 which was perfect. Used Bru'n Water to hit ideal stout numbers. Added 3g of mgs04 and 2.5g of CaCl to mash. After 27 mins, stirred and measured tep at 146 (3 degree drop). Over the entire hour it dropped 7 degrees farenheit. Outside temp was about 9 degrees celsius. Used Fermcap. Fermented 3 days at 17. Looked almost done after 3, upped to 18.5. Removed after 4 days to room temp. Gravity was 1.011. Airlock still bubbling after 6 days. After 7 days airlock stopped.
