Notes

Poland Springs water. Additional MASHOUT ADDITIONS: now included as 0 min. mash additions - add to sparge water. Actually hit closer to 156 mash temp. Thursday 4/5/2012 PM. Pitched at 63deg :1.054OG, 27L. 1st brew with ferm chamber. set to 63.5deg. (+1,-0.5 dead zone). After 12 hrs, bumped up to 66 deg(+1,-0.5). Normal airlock activity. Nice fruity esters from airlock. 4/7/2012; Day2 PM. Skimmed trub from Kraussen. Adjusted temp to 66.5(+0.6,-0.2). 4/8/2012: Hour 60. Adjusted temp +0.5 deg to 67.0. 4/8 -->4/10. Slowly adjusted temp up to 70deg in 0.5deg increments. 4/13. Gravity 1.016, 4.9% APV. Gentle roust and adjusted to 71deg. 4/19. Day 14. Gravity 1.013@70.6deg. 5.25% APV. 4/20/2012, Day 15. Dry hopped Amarillo + Simcoe whole hops in Primary. After 12 hours added sanitized plastic lid filter to submerge hops. 4/26/2011, Day 21 PM. Added a handful of Wilimette, smells great. Began to cold crash to 35 deg. 4/29/2011. Day 24. Bottled 6.4 gallons. 6/20/2012. +2 Months. Carbonation is perfect. Tastes great, darker style pale ale. Hop taste and smell is very noticible, but not quite as strong bitterness as an IPA. I might back off on the FWH to 1/2 oz. or 2/3 oz. Pretty much leave it alone.

Great smooth tasting and hoppy pale ale. Not bitter enough to be an IPA, but plenty of wonderful hop smell and flavor balance out the malty MO and Vienna base.
