Taste Notes

TURNED OUT GREAT! little time has passed...in future add exact dates to notes!!!!! weird? dropped from 1.012 after fermentation to 1.006 after 3 weeks in the bottle? is a lot thinner and not as good but still drinkable..why? NEW MASH TUN...over shot dough in be alot i saw 160...iced down quick and it leveled out at 152-153ish.added crosby baker enzymes. checked at 30 had to climb temp back to 151ish. stuck sparge before mash out. twisted siicone!! pulled all mash to fix problem. directy fired the mash while recirculating to 166.7. rested 10 minutes. NEW BALL VALVE...had a hard time regulating lauter. ran tun dry by accident and added sparge water to do a second running. may have over sparged ran down to 2.1 brix or 1.007:( also water coming from HLT was very hot (211) but mash temp was not. Hope there is no tanin harshness. did not check ph. gunna take a couple of brews to get this sucker dialed in. added about an extra gallon of water preboil, NEXT Time: undershoot doughin by a titch. can always recirculate and direct fire to hit temps. Take care not to bump silicone. moniter sparge more closely next time...try and get it dialed in. use BS for actual volumes with low ABV brews. figure out mash tun temp and enter it next time. put stool under ball valve to hold pitcher while it fills.

add more biscut malt up to .5 pound loose golden naked oats ADD CARAPILS FOR BODY ...maybe not? add carapils but keep all else!
