Notes

Mashing ended up hitting 2.5 brix (1.009 SG) and stopping lauter at 10.375" height in 20 gallong pot. That's 11.27 gallons. at 11.8 brix (1.046 SG). I added 2.5 gallons to get theoritical 1.038 and 13.77 gallons. I ended up adding another 1/2 gallon for a final post boil of 13" height (14 1/8 gallons) at 10.6 brix (1.041 SG). Error of about 1/8 gallon. 3 gallons top up should have brought it down to 1.036 not 1.041. something fishy with my notes, I believe I was at 1.037 preboil gravity but my notes contradict. Post boil was 10.25" height with immersion chiller. 11 1/8 gallons at 10.8 brix (1.042 OG) Hydrometer was 1.045-6 Pitched yeast April 16 2017 9am Racked to two corny kegs on May 24 2017. 10 gallons at 1.003 FG Put one once Nelson hops in one keg, in meas bag May 29 2017 put in 2 Celsius freezer. Beer gunned it into a 750mL and two grolsch. Plus drank a glass. Creamy , wine notes and spice. Carbonation good, yet I only left it on 25psi for three to four days at room temp. Finally finished first dry hopped keg on January 25 2018. Took a while to grow on me. The dry hop in fridge did work after a season or so. Ended up gelatine ing for clarity. Came out crystal clear. Still have non dry hopped keg to tap into ��
