Taste Notes
Simply quartered peaches when they were ripe enough and didn’t worry about campden or a puree. Came out real nice.
Racked on secondary after one week. Added peaches right before we left for Washington. Racked peached beer into third fermenter (w/o peaches) added hops for a week once available kegs were empty.

Kegged. Fruit fermented out a bit. 1.005 (1.028 observed)
Aroma is amazing. Super peachy. Hops contrast with freshness and some grassiness. Peach adds a tart and it’s complemented with bitterness. It’s a little too bitter but that’s expected for this IPA. Tastes like fresh peaches that are just a little under ripe. It’s nice. Notes
1 Campden Tablet 24 hours in pureed peaches.

Way too damn tart… Peaches were not ripe enough. Rushed it.
Hopefully it balances out when it is conditioned. Also should have siphoned into a filter bag rather than directly in the keg. There’s a ton of shit that will be sitting in there now. May have to think about siphoning it into another keg.

Racked on pureed peaches

Racked into third fermenter and concentrated peaches into a mesh bag into the third from the 2nd. Dry hopped.
1.030 unconverted (1.005)
Nose is peach heavy which is nice. Stirring up all of the peaches by transfering it into a 3rd fermentation carboy should be good. Now it's steaping in the mesh bag. There is a small tartness to the start as well as the peach flavor in the mids. Can be confused with hops. The hops flavor comes through nicely in bitterness.

Kegged. 7.1 brix converts to 1.002
Peach overcomes everything... Meh. Nose is peach.
Taste is a bit flat somewhat tart with some bitteness. But peach is really the show runner here.This Recipe Has Not Been Rated
