Taste Notes

After initial 40 psi carb boost, it’s heavy on cloves, and light on ginger. Overall pretty nice. Could use more molasses, maybe.

Notes

Wound up going a bit heavy on the pumpkin; 5 small sugar pumpkins is too much. Would do 3 or 4 next time - it adds a tiny bit too much squash taste otherwise. Changed wheat to 1 lb to increase OG - we’ll see on taste. ————————————————————— Complete re-do. More or less a new recipe. Nailed pre-boil; added an extra 0.25 gallons of strike water, going from 7.5 to 7.75, or about 3%. Collected 6.6 gallons (expected 6.5) @ 1.046 (expected 1.047). Added the following spices at flameout, to total 15g: 1 tbsp cinnamon 1 tsp nutmeg 1/2 tsp cloves 1/2 tsp ginger 1/2 tsp cardamom Added the following spices as a tea, to total 9g: 1 1/2 tsp cinnamon 1/2 tsp nutmeg 1/4 tsp cloves 1/2 tsp ginger 1/4 tsp cardamom ——————————————————————— Changed Rye to 2#, added 1# Oats ————————————————————————— Collected ~6.25 gallons @ 1.046 (after 4 oz. blackstrap molasses add) Post-boil, collected 5 gallons @ 1.062 Pitched and fermented at 62 F. ————————————————————————— Collected unknown volume @ 1.040 after 4 ozs. molasses (non-blackstrap) add. Collected ~5 gallons @ 1.050 post-boil (had some pumpkin in the fermenter, threw off the measurements). Given the low OG and expected high OG due to desired mash temp, added 500g of sucrose to bump OG up to 1.058. Forgot to do flameout add, added tea to fermenter instead. Will check later in ferment to see if additional spices are warranted.
